I love the idea of being able to "capture" images and videos and put them directly into a posting or online conversation. If you had a classroom that had a message board, where students could post questions about homework or where teachers might post a question for the week, this could be a really cool way to pinpoint exactly what you meant in a response. If you are discussing the Battle of Bunker Hill, and a student was a home questioning what the fort looked like, you could send them a picture or a video link of a recreation. Maybe less useful in a classroom where students don't have access to the internet at home.
Skype could be used in all sorts of ways. I love the idea of 5th graders making connections with other 5th graders in the various regions of the US. They could share state facts, or really just converse face to face about whatever. How fun to do a comparison of different accents! It would be even cooler to hook up with schools overseas. The Jing program would be equally useful for this kind of interaction as well.
